Hake Calabacitas

Winter is coming, as we exit Fall, and with it so go our fresh vegetables.

We have been enjoying a productive garden of our own, supplemented from our terrific local Farmer’s Market.  Fall always brings zucchini and squash, which always makes me think of Calabacitas.

Calabacitas is that wonderful fresh mexican vegetable dish: summer squash, poblano, onion, garlic, and cilantro stir fried together.  It’s fresh, spicy, and full of flavor.

I served this fresh stir fry on top of a spinach salad with garden fresh tomatoes… and a pan seared hake (white fish).  Yummy!
