There are a lot of miso glazed fish recipes. You can use any white fish. Most commonly seen for this preparation are cod and seabass. In this case I used seabass, my favorite fish. This particular miso glaze recipe comes from Nobu Matsuhisa (of Nobu Restaurant fame).
- 3 T. mirin
- 3 T. sake
- 1/2 c. white miso paste
- 1/3 c sugar
Whisk ingredients together, heat briefly to dissolve sugar.
Put fish filets into baggie with miso glaze, and marinade for overnight.
When ready to cook, put under Broiler in oven for 4 – 5 minutes until done.
It’s not only easy to make miso glaze ahead of time… and at time of dinner, but it is lusciously delicious. It makes a terrific company dish.
I buy miso paste and freeze for when I need it, as it takes me a long time to get through an entire bag or container.
