Now that our pizza oven is up and running, we are trying to perfect different wood fired appetizers. Of course, any of these can be done in an oven… but when the pizza oven is fired up to 1000F, appetizers don’t take long!
We’ve done some great roasted olives, with a mixture of olives, a dash of olive oil, and a splash of red wine vinegar, fresh herbs (rosemary and thyme), orange peel, and crush red pepper. They come out terrific. Love that warmed over – roasty taste.
We’ve also tried a melty ‘caprese-esque’ cheesey dish. Since we can’t get good burrata or buffalo mozzarella… we tried to create our own version with a simple mix of cheeses (mozzarella, munster, parmesan) with a splash of milk. We drizzled basil pesto on top and scattered grape tomatoes over the top. It was excellent. Definitely a do-again… but next time, I think I’d let it roast a bit longer to get the tomatoes more blistered.
